Steak and Bok Choy Stir-Fry

Aside from the mental strain of diabetes, and it is quite difficult to ignore that one – I find nutrition is the hardest part of “proper” diabetes management. You see, the thing about convenient dining options is that it’s too convenient. And the nutritional trade-off is worse than GameStop standards.

This is Steak and Bok Choy Stir-Fry. Steak, bok choy, broccoli, bell pepper and some seasoning/flavor on top of brown rice (thats the carb part). In the grand scheme of things, this was a simple meal to prepare. The problem, if it’s fair to identity one, is that you don’t keep things like bok choy in the fridge. At least I don’t.

After a long day of work, sometimes you don’t feel like taking the time to buy ingredients for and prepare a meal. Sometimes the easy way out is too irresistible – I suppose you could say that about diabetes management in general. But the long term benefits of making that extra effort to make things like this are the thing to keep in mind. It’s difficult to keep the big picture in mind when some days I just want a cheeseburger but I need to be better about stuff like this.

Keep the focus. Allow the moments of indulgence. But never lose sight of what’s really important. I can be better. I must be better.
